Braised Beef Short Rib Croquettes

These Short Rib Croquettes will revamp your leftover game. Filled with juicy, tender meat and melty cheese, then fried to golden perfection. 

Braised Beef Short Rib Croquettes with Spiced Béchamel

These Short Rib Croquettes combine two classic French cuisines into one magnificent recipe. The croquettes are prepared with juicy shredded beef in a flavorful red wine sauce, a nutty Gruyère cheddar, a golden crispy breading, and then served over a spiced Béchamel.

This Recipe was inspired by The Notorious Foodie, who shared his recipe on Beef Short Rib Croquettes. So, one night I made Red Wine Braised Beef Short Ribs slow cooked in the Dutch Oven for hours, until they were fall off the bone tender. We thoroughly enjoyed dinner that night, and the following day I decided to try out this recipe I was sent! I hope you enjoy my take, I've also added a link to his original post.



To Make This Recipe You Will Need…


Cooked Beef Short Ribs

Gruyère Cheddar

Flour

Eggs

Panko Breadcrumbs

Whole Milk

Butter

Salt & Pepper

Nutmeg

Cinnamon

Garlic Scapes



Substitutions and Suggestions

If you don’t have Gruyère, I would recommend another cheese with a strong flavor, like Cheddar or Gouda.

If you don’t have panko bread crumbs, plain bread crumbs will work just fine. If you don’t want to run to the store and have neither you can substitute with something else in your pantry including corn flakes or crackers.

Garlic Scapes- I have been finding these frequently at my local farmer’s market, but you can use chives in it’s place if there aren’t any around you locally.

INGREDIENTS


Short Rib Croquettes

2 lbs Short Rib

5 oz Gruyère Cheddar

2 c Panko Bread Crumbs

½ c Flour

3 eggs

2 qt frying oil


Spiced Béchamel

2 tbsp flour

500 ml whole milk

2 oz Gruyère Cheddar

3 Tbsp Butter

2 Tbsp Garlic Scapes

1 tsp cinnamon

1 tsp nutmeg

Salt & Pepper to taste


Instructions

For the Croquettes

  • Shred Beef Short Ribs into a large bowl then add a few ladles of the broth to the bowl.
  • Add shredded Gruyère cheese to the bowl and mix to combine.
  • Take a large spoonful of the mixture and flatten with your palm.
  • Add a small cube of Gruyère cheese, and form into balls.
  • Toss the balls into Flour, Egg Wash, then into the Panko breading.
  • Freeze 15-20 minutes.
  • Heat peanut oil on med-high until it reaches 350 degrees.
  • Fry the Croquettes for a few minutes until golden brown and crispy.

For the Spiced Béchamel

  • Heat sauce pan over medium heat and melt 3 Tbsp of butter
  • Once butter is melted, add 2 Tbsp of flour and whisk for 1 minute.
  • Pour 500 ml of whole milk into the pan, add the Garlic Scapes and simmer until thickened.
  • Season with Cinnamon, Nutmeg, Salt, and Pepper.
