  1. In a large pot, combine the kosher salt, sugar, orange, lemon, lime, smashed garlic, black peppercorns, green onion, thyme, and bay leaves to the pot. Stir until the salt and sugar are completely dissolved.

    Place the chicken in the pot. Pour remaining water over the chicken, ensuring it is fully submerged. Cover the container and refrigerate for 4-6 hours. This allows the flavors to penetrate the meat thoroughly.

    After brining, remove the chicken from the brine. Rinse the chicken thoroughly and trim. Pat the chicken dry with paper towels.
